Description
The refractive index of a food sample is converted to % invert sugar by weight using the HI96804 Digital Invert Sugar Refractometer. The tables in the ICUMSA Methods Book (International Commission for Uniform Methods of Sugar Analysis) that show how the refractive index changes with temperature for a % by weight inverted sugar solution provide the basis for this conversion.
