Hanna Instruments HI96801 Digital Refractometer for Brix Analysis in Foods

The HI96801 is a reliable, transportable digital refractometer for food items that measures Brix, a unit of measurement for sugar content in aqueous solutions. Results are reported by the HI96801 with an accuracy of 0.2% Brix. The meter’s functioning is streamlined by having just two buttons: one for calibrating with distilled or deionized water and the other for taking measurements.

According to the ICUMSA Methods Book standard, all readings are automatically temperature-compensated and displayed within a 1.5 second response time. The stainless steel well and sealed flint glass prism are both simple to clean. Simply clean with a gentle towel to get ready for the subsequent sample.

Description

The refractive index of a food sample is converted to percent brix using the portable refractometer HI96801. The tables in the ICUMSA Methods Book (International Commission for Uniform Methods of Sugar Analysis) that show how the refractive index changes with temperature for a % by weight glucose solution provide the basis for this conversion.

Fruits, energy drinks, puddings, soy milk, juices, jam, marmalade, honey, soups, jelly, tofu, and sauces are all excellent candidates for analysis with the HI96801. The HI96801 is a simple-to-use device for determining the amount of sugar in food samples in a lab or out in the field.

Making a % Standard Sucrose Solution

To make a Sucrose Solution, follow the procedure below:

  • Place container (such as a glass vial or dropper bottle that has a cover) on an analytical balance.
  • Tare the balance.
  • Weigh out X grams of high purity sucrose (CAS #: 57-50-1 directly into a beaker
  • Add distilled or deionized water to the beaker so the total weight of the solution is 100g.
  • Note: Solutions above 60% may need to be vigorously stirred or shaken and heated in a water bath to roughly 40°C (104°F). Remove solution when sucrose has dissolved and allow to cool before use.

Refractive Index

The refractive index of a sample is used by the HI96801 to obtain measurements. The refractive index gauges the behavior of light as it travels through the sample. Light will refract and reflect differently depending on the makeup of the sample. The refractive index of the sample can be examined by measuring this activity with a linear image sensor and utilized to ascertain its physical characteristics, such as concentration and density. The HI96801 enables measurement through the employment of an LED light, prism, and lens in addition to a linear image sensor.
Depending on the component present, temperature changes will have an impact on a solution’s density. For reliable findings in digital refractometry, temperature adjustment must be used. The HI96801 has a built-in temperature sensor and is programmed with temperature adjustment algorithms for a % by weight sucrose solution in line with the ICUMSA Methods Book.
